As summer is approaching and our industry is slowly reopening in Copenhagen, we are delighted that our summer bar Empirical Dock House will be open from June 10th to August 31st. Located in Refshaleøen at the former Baby Baby Bar, the team will be slinging cocktails, Empirical boozy ice creams, and a banging Empirical Boozy Milkshake laced with Ayuuk between your dips in the water. We are looking forward to welcoming you, catching up, and fueling you with Empirical love while following the governmental restrictions.

Shrimp Roll by Beau & Team ILUKA
Brioche bun, mussels emulsion, lettuce, lovage, shrimp, and smoked butter. Served with a side of crisps and dill pickle. Available Saturday and Sunday.

How to drink Empirical: Ayuuk Flip

The main ingredient in this spirit, Pasilla Mixe, is a special, smoke-dried chili grown at 2,700 meters above sea level by the Mixe people — known in their native language as Ayuuk. Once fully ripened, the chilis are partially dried on the plant and finished on wicker racks over gnarled hardwood smoke. The true Pasilla Mixe possesses a twilight, dark red fruitiness and a unique earthiness that reflects the rugged terroir in which it grows.
