Events: Empirical x Fruktstereo x Josephine Sondlo

Fruktstereo was started by former fine dining sommeliers Karl Sjöström and Mikael Nypelius in 2016. They produce all-natural ciders and fruit pet-nats in Malmö, Sweden using fruits from abandoned orchards or home gardens and ‘waste fruits’ that farmers can no longer sell. Everything they make is fermented with natural yeast with zero additives.

Josephine Sondlo is Sweden’s upcoming award-winning bartender. For every drink she makes, Sondlo draws inspiration from the flavor, sustainability, and sensory perception of taste.

We set out to make a spirit based on plum kernel. Plum kernels lie within the pits of all plums. They have a rich fragrance, fruity top notes, and marzipan undertones. In both appearance and taste, they most closely resemble almonds. We get ours from the Stanley variety of plums, known for its plump, dark blue-skinned fruit with yellow flesh.
