Koan X Empirical
We are thrilled to welcome our friend Kristian Baumann and his team for a three-month pop-up restaurant inside the distillery, from October 8th.
The name of his new restaurant is Koan.
A Koan is a riddle-like question in Zen Buddhism meant to break boundaries and create an open mind.
"This is the beginning of my journey back to my birth country South Korea via art, design, history and all wonders of the country."
The menu is a reflection of the wonderful Danish terroir and the amazing producers we have in the Nordic region but is also inspired by the many trips Kristian has had to South Korea over years.
The Koan team has created an 11-course set menu in addition to small sweets and a special gift for each guest, for 650DKK per person.
They will be offering a wine pairing, a non-alcoholic beverage option and last but not least a cocktail pairing developed by our R&D team.
There will also be a small bar where you can enjoy Empirical drinks, before or after your dinner.
The distillery offers a massive, beautiful space that’ll allow us to follow The Danish Government restrictions and guidelines with ease and create plenty of space between each table. Please remember to bring your mask.
