The Dove is Ago Perrone and Giorgio Bargiani's take on an all-time Mexican favorite: the Paloma.
Ago Perrone and Giorgio Bargiani are known for redefining and reinventing classic cocktails at The Connaught bar. Mixing tradition and innovation, some of their most famous recipes include a Martini and a Bloody Mary.
For this new collaboration, they drew their inspiration from an all-time Mexican favorite: the Paloma. Starting from a common love of Mexican culture they brought their Italian heritage to give this drink an aperitivo feeling.
The smokey notes of Ayuuk are a substitute for the usual tequila or mezcal and are complemented by ingredients such as grapefruit, Douglas Fir leaves and kaffir lime.
Ago and Giorgio chose to call it The Dove to symbolize positiveness as their goal was to create a recipe for a delicious, feel-good drink.
A percentage of the sales will be donated to the Electric Bing Sutt fundraiser to help them rebuild after the horrific explosion in Beirut.

Key ingredients: Ayuuk, Don Fulano Tequila Reposado, Grapefruit, Douglas Fir, Lime, Kaffir Lime Leaf.
